In an interview with Definitely Filipino, the talented woman behind the Aviya & Elle Beautiful Bites, Kharelle Abejuela Apolinario, shared that her aunt has always been a plant lover so she decided to use her skills to bake a unique cake that matches her personality and reflects what her heart desires.

“Birthday gift ko sa tita ko ‘yong cake for her 60th birthday dahil sa mahilig siya sa halaman. That’s why I decided to make her this kind of cake,” the owner said. “Naisip ko kasi na mas magmumukhang realistic iyong cake if sa paso siya ilalagay, kaya ginawa kong paso iyong pinaka-cake niya.”

But aside from the story behind her unique creation, the potted plant cake and the likes of it are symbols of triumph from all the struggles and hardships she experienced when she started her business after losing her job because of the COVID-19 pandemic.

“Year 2015 ako nag-start matuto mag-bake through TESDA’s [Technical Education and Skills Development Authority’s] Training for Work Scholarship Program. I also attended different workshop for enhancement ng iba pang skills,” she narrated.

“Nitong pandemic,” the millennial baker continued, “isa ako sa mga nawalan ng work kaya nag-push ako ulit mag-online business ng customized cakes.”

Within a year, she has grown so much and managed to bake a lot of cakes that are too beautiful to eat sometimes. Such an inspiration amid trying times like this, right?
