[Video] Swiss Scientists create chocolates that shimmer in rainbow colors without food coloring

Colorful, shimmering chocolates, anyone?

Scientists from ETH Zurich and FHNW University of Applied Sciences and Arts Northwestern Switzerland recently filed a patent for a process that makes chocolates shimmer in rainbow colors without using food coloring.

“ETH researchers are making chocolates in rainbow tints without the addition of colourants. They have found a way to imprint a special structure on the surface of the chocolate to create a targeted colour effect,” ETH Zurich shared on YouTube through an informative video, disclosing that the process is “similar to a chameleon”.

“The effect is achieved simply through a surface imprint that produces a structural color. The process is similar to a chameleon: the surface modulates and disperses light to display specific colors,” it was noted.

Everything started when food scientist Patrick Ruhs, materials scientist Etienne Jeoffroy, and physicist Henning Galinski randomly talked about chocolate during their coffee break. The main focus of their discussion is whether it would be possible to make chocolate in other colors than brown and white, and if so, how. Intrigued by the complexity of the topic, they began researching and eventually, a series of experients took place.

The scientists already contacted various chocolate manufacturers and are in discussions to have their chocolate coloring solution commercially implemented soon, planning to start a spin-off company in the future.
